Sweet Potato Boats with Spicy Guacamole

@naturallyzuzu helped us create a new spin on sweet potatoes! We’re loving this colorful dish with a kick featuring Good Foods Spicy Guacamole!


Makes 5-6 servings

Prep time 10 min

Cool time: 35 min


  • 5 medium size sweet potatoes
  • 1 Tbsp of olive oil
  • Salt and pepper
  • Good Foods Spicy Guacamole
  • Handful of pomegranate seeds and rosemary for garnish


  1. Preheat oven at 390 F
  2. Cut the sweet potatoes in half lengthwise
  3. Line a tray with a parchment paper and place the sweet potatoes on the tray
  4. Season with salt and pepper and drizzle it with olive oil
  5. Turn sweet potatoes face down and roast for 35 min
  6. Remove the sweet potatoes from the oven. Let them sit for 15 min until they cool off
  7. Top each sweet potato halves with spoonful of guac. Garnish with pomegranate seeds. Enjoy!
