3 small sweet potatoes, cut into 1/2-inch cubes
2 tbsp olive oil
2 tsp salt
2 tsp chili powder
1/2 tsp pepper
1 cup shredded cheddar cheese
2 cups shredded iceberg lettuce
1/2 small red onion, thinly sliced
6 slices thick-cut bacon, cooked and crumbled
Sour cream, for serving
Directions
- Preheat grill to medium-high heat or prepare a campfi re using wood. Combine potatoes, oil, salt, chili powder and pepper in a large bowl and toss to coat.
- Divide potato mixture evenly among 4 large sheets of heavy-duty aluminum foil. Bring edges of foil together, folding to seal tightly. Place foil packs on grill and close grill lid. If cooking over a campfi re, place packs directly over coals. Cook, shaking packs occasionally, until potatoes are tender, about 20-30 minutes.
- Carefully open packs and sprinkle with cheese. Top with lettuce, onion and bacon. Dollop with Good Foods Chunky Traditional Guacamole and sour cream. Serve and enjoy.
