Chicken, Spinach and Artichoke Sweet Potato Boats

Ingredients

  • 4 medium sweet potatoes

  • 1 tbsp. olive oil

  • 2 tsp salt

  • 1 pkg Good Foods Spinach Artichoke Parmesan Dairy Dip

  • 2 cups shredded rotisserie chicken

  • 1/2 cup packed baby spinach, chopped

  • 1 cup white shredded cheddar cheese

  • Chopped fresh parsley, for garnish

Directions

  • Preheat oven to 400°F and line a baking sheet with aluminum foil. Prick potatoes with fork and rub with olive oil. Season with salt. Bake until potatoes are tender, and fork inserted easily comes out, about 45-50 minutes. Slice potatoes in half lengthwise, and fl uff fl esh with a fork creating a well in the center for the fi lling.
  • Meanwhile, mix Good Foods Spinach Artichoke Parmesan Dairy Dip, chicken and spinach together in a large bowl. Place halved potatoes, cut-side-up, on baking sheet. Top each potato evenly with chicken mixture and cheese.
  • Bake until cheese is melted and chicken mixture is hot, about 8-10 minutes. Garnish with parsley and serve.
